Soak bird’s Nest in water, wash and drain( Please follow instruction on the package for soaking and double steaming.) for later use.
Wash Dalian Dried Scallop, soak in water.
Wash Red Dates and remove the seeds for later use.
Defrost Frozen Crocodile Meat, wash and drain, cut into slices, add pepper, salt and potato starch, marinate for later use.
Bring 3 bowls of water to boil, add Crocodile Meat, Red Dates and Dried Scallop and cook for 10 minutes, put into stewing mug, add Bird’s Nest, double steaming with low heat for 30 minutes, put a little salt before serving.
Note: Salt should be added just before serving. If salt was added while double steaming, bird’s nest would be decomposed by the salt.
