Step:
- Dress and rinse the hairy crab. If any brown meat found inside the crab, keep it for later use. Bring water to a boil with Hokkaido hairy crab shells/ legs for 10 minutes, skim off the scum;
- Add cooking wine, miso paste, brown meat (if any) and bring it to a boil, garnish with scallion and serve.
